Kalyn Denny was the first food niche blogger I ever followed. I’m not a food fadder by any stretch but her recipes and the reasons behind her eating plan have always interested me. Her blog at Kalyn’s Kitchen is full of inspiring recipes.
I know that I should follow her low carb / low G.I. South Beach diet and one day I’ll get there. While I’m working my way up to giving up carbs, I often make Kalyn’s recipes and I’ve never been disappointed.
She’s proven that you can eat a delicious and varied diet and you won’t miss cakes, pies and bread. Proven? She’s been blogging a low carb diet for ten years. Yes, that’s right for ten years and it’s no wonder that she’s near the top of the list of popular bloggers.
Kalyn lives in Bountiful, Utah. Just writing that makes me smile. What better place for a recipe developer and food writer to live than Bountiful? Before her career in food, Kalyn was an elementary school teacher for thirty years and gave it all up to follow her passion in 2009. She also had a business that organized catered houseboat trips on Utah’s Lake Powell – so she’s had an interesting couple of jobs.
Kalyn’s Kitchen began in 2005 when her brother Rand suggested she put her recipes in an online blog when so many of her family and friends asked for recipes. When you see someone who’s lost 42 pounds, you’d want to have the recipes, wouldn’t you? Her brother created her first blog and still helps her with the graphics.
In addition to Rand, she has 8 more brothers and sisters who share their 39 children with Kalyn. Her nephew Jake and neice Kara are regular cooking assistants. (and why wouldn’t you want to be there when she cooks food like this!) The recipes that helped her to shift all the weight have changed over the years but she’s remained true to low-carb cooking and recipes for weight-loss or controlling blood sugar.
Another thing about Kalyn that I appreciate is her opinion. You’ll see political commentary on her Facebook page and like Jamie Schler from Life’s a Feast, she tells how she feels about important issues. Many of us, me included, are always worried that we’ll polarize our readers and they’ve both proven me wrong time and time again. We should all tell it like it is or how we’d like it to be.
Finally, the bit about Kalyn that I love, love, love is how helpful she is to anyone who asks her a question. I can’t remember the number of times that I’ve asked a question in any of the Facebook forums that Kalyn is in that she doesn’t answer with something really helpful. Not just to me but to everyone. As busy as she must be with a full-time blog of this size, she answers everyone with well thought out answers that put bloggers on the right track. She says it’s because she’s been doing this a long time and others have helped her and I think she’s just a mighty fine person through and through.
I’ve made Kalyn’s Southwestern Crustless Breakfast Tarts Recipe quite a few times already and sometimes I take the Southwest out of it and put other parts of the country in there – doesn’t matter because everyone raved when I made them. I also make these for lunch with a side salad.
